Q at 7-11 last night was crazy so I decided not to buy the bread for breakfast liao. No choice, have to start the engine for baking. So many mandarin oranges at home so here we go for the first clearance - Orange Butter cake. Just to make look better for Charmaine, added the butterfly candies bought from sunlik. Exclusively for her, daddy and aden does not have them. Hee Hee.
Ingredient
250gm salted butter
100gm castor sugar
4 eggs, lightly beaten
2 tsp orange zests
250gm self-raising flour, sifted
100ml fresh orange juice
Method
Using a electric whisk, cream butter & sugar until light & fluffy.
Add in eggs gradually and beat till combine. Add orange zest and mix evenly.
Fold in flour, alternate with orange juice in 3 batches.
Fill in cupcake cups up to 3/4. Bake in preheated oven at 160 deg cel for 25mins. Rest cake in oven for 10mins before cooling completely on wire rack.
P.S. Recipe from Peng's kitchen, just modify it to put in cupcake cups instead of tin.
